White Bean Chicken Chili
brothy • one-pot • make-ahead friendly

A lighter, brothy white bean chicken chili with tender shredded chicken, creamy white beans, and layered spices. This version keeps the broth balanced and bright while still delivering depth and warmth. This is the kind of chili I make when I want something warming but not overly heavy.
Why This Recipe Works
This white bean chicken chili builds flavor in layers. Searing the chicken first creates browned bits that deepen the base, while sautéing the vegetables in the same pot captures that flavor.
Blending a small portion of the beans with broth thickens the chili naturally—without flour or heavy cream—so it stays brothy but still has body.
Simmering gently keeps the chicken tender, and adding lime juice at the end brightens the richness. The result is hearty but not heavy, with a clean finish.
It has the same cozy, protein-rich feel as my Classic Chicken Noodle Soup but with a creamy texture similar to my Creamy Potato Soup.
Ingredients & Notes
- Chicken thighs: Stay tender and shred easily. Sear just until golden; they finish cooking during the simmer.
- White navy beans: Use 3 cups cooked beans. Canned beans work well—drain and rinse before using. If cooking from dried, start with about 1½ cups dried beans to yield 3 cups cooked.
- Broth: 4 cups keeps the chili brothy rather than thick. Add a splash more when reheating if needed.
- Spices: Bloom briefly in oil to deepen flavor before adding liquid.
- Bean purée: Blending a small portion thickens the chili naturally without flour or cream.
- Lime juice: Stir in off heat for brightness.

Equipment
- Large Dutch oven or heavy-bottomed pot

How to Make White Bean Chicken Chili
- Pat chicken dry and season lightly with a pinch of salt.
- Heat olive oil in a large Dutch oven over medium-high heat. Sear chicken 3–4 minutes per side until golden and lightly browned on the edges but not fully cooked. Transfer to a plate.
- Reduce heat to medium. Add onion, jalapeños, and red bell pepper. Cook 5–7 minutes, scraping up browned bits from the pot.
- Stir in garlic and cook 30 seconds.
- Add cumin, chili powder, coriander, smoked paprika, oregano, cayenne, and 1 teaspoon salt. Cook 30–60 seconds.
- Blend ½ cup beans with 1 cup broth until smooth.
- Add remaining broth and bean purée to the pot. Stir well.
- Return chicken and any juices to the pot. Bring to a gentle simmer, cover, and cook 18–22 minutes until chicken is cooked through.
- Remove chicken and shred with two forks.
- Return shredded chicken to the pot along with remaining whole beans and corn. Simmer uncovered 5–10 minutes.
- Stir in lime juice, cilantro, and remaining salt to taste.
- Serve hot with lime wedges.

Texture & Flavor Tips
- For thicker chili: Blend more beans or simmer uncovered a few extra minutes.
- For more heat: Increase cayenne slightly.
- For brighter flavor: Add extra lime juice just before serving.
- If too thick when reheating: Add a splash of broth.

Substitutions & Variations
- Chicken breast: Can be used but may be slightly less tender.
- No corn: Omit or replace with diced zucchini.
- Creamy version: Stir in softened cream cheese off heat.
- Vegetarian: Omit chicken and add an extra can of beans.
Storage & Reheating
- Refrigerator: Store up to 4 days in an airtight container. The chili thickens slightly as it sits. Add a splash of broth when reheating to loosen it.
- Freezer: Freeze up to 3 months.
- Reheating (stovetop): Warm gently over medium-low heat, adding broth if needed.
- Reheating (microwave): Heat in intervals, stirring between each.
