Easy One-Pot Lentil Soup
brothy • plant-based • freezer-friendly

A balanced, easy one-pot lentil soup with tender vegetables, warm spices, and a lightly thickened broth. It’s hearty without being heavy and built on a simple sauté-then-simmer method that delivers consistent results. This is the kind of soup I keep on repeat when I want something simple, filling, and easy to reheat throughout the week.
Why This Recipe Works
This is a brothy lentil soup, not a stew. The ratio of lentils to broth keeps it fluid and spoonable rather than dense.
Blooming tomato paste and spices early builds depth without long cooking. Brown or green lentils hold their shape and soften evenly while keeping the broth clean.
Blending a small portion at the end thickens the soup naturally, so you get body without cream or flour.
It works well for weeknights, meal prep, and freezer portions. The flavor improves after resting.
It has the same hearty, satisfying feel as my Freezer-Friendly Vegetable Soup, with the simple, one-pot convenience you’ll also find in my White Bean Chicken Chili.
Ingredients & Notes
- Lentils: Use brown or green lentils only. Red lentils break down completely and change the texture.
- Broth: Six cups keeps the soup brothy. Add more when reheating if needed.
- Tomato paste: Cook until slightly darkened to remove raw flavor and deepen the base.
- Spices: Bloom briefly in oil to activate their flavor.
- Soy sauce or Worcestershire: Soy gives cleaner saltiness; Worcestershire adds slightly deeper savoriness.
- Lemon juice: Add off heat. Start with 1 tablespoon and adjust.

For another filling, protein-rich option, my Beef Barley Soup is a great choice.
Equipment
- Large Dutch oven or heavy-bottomed pot (5–6 quart)
- Wooden spoon
- Immersion blender (or standard blender)
- Ladle
How to Make Easy One-Pot Lentil Soup
- Heat olive oil in a Dutch oven over medium heat.
- Add onion, carrots, and celery. Cook 6–8 minutes until softened.
- Add garlic and cook 30 seconds, just until fragrant.
- Stir in tomato paste. Cook 1–2 minutes, until slightly darkened and rich-smelling.
- Add cumin, smoked paprika, thyme, and black pepper. Stir 30 seconds.
- Add lentils, diced tomatoes with juices, broth, bay leaf, and soy sauce (or Worcestershire).
- Bring just to a boil, then reduce to a gentle simmer. Cover partially and cook 30–35 minutes, stirring occasionally, until lentils are tender.
- Remove bay leaf.
- Blend 1 cup of the soup and return it to the pot for light thickening. (Blend more for thicker texture.)
- Stir in lemon juice. Adjust salt.
- Serve hot with a drizzle of olive oil and parsley if desired.

Texture & Flavor Tips
- Keep at a gentle simmer for a clearer broth.
- For thicker texture: Blend up to 2 cups.
- For thinner broth: Add warm broth when reheating.
- If flavor tastes flat: Add a pinch of salt or a splash more lemon.
- Let the soup rest 10–15 minutes before serving for fuller flavor.
Substitutions & Variations
- Vegetable broth or chicken broth: Both work.
- Spinach or kale: Stir in during the last 5 minutes.
- Red wine vinegar instead of lemon: Use the same amount.
- Add cumin seeds: Toast in oil before vegetables for extra depth.
- Do not substitute red lentils if you want this texture.
If you want a smoother, creamier texture, my Creamy Potato Soup (no heavy cream) is a great alternative.
Storage & Reheating
- Refrigerator: Store up to 4 days.
- Freezer: Freeze up to 3 months. Cool completely before freezing.
- Reheating (stovetop): Warm gently and add broth to loosen.
- Reheating (microwave): Heat in 60–90 second intervals, stirring between.
- The lentils will continue to absorb liquid as it sits, so the soup will thicken—just add broth when reheating.
