Ingredients

For the Casserole
  • 1 bag frozen diced hash browns, 30 to 32 ounces, thawed
  • 1/2 cup unsalted butter, melted
  • 1 small yellow onion, finely diced
  • 1 can cream of chicken soup, 10.5 ounces
  • 2 cups sour cream
  • 2 cups freshly shredded sharp cheddar cheese
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
For the Topping
  • 3 cups cornflakes, lightly crushed
  • 4 tablespoons unsalted butter, melted

Method

  1. Preheat the oven. Preheat the oven to 350°F. Grease a 9x13-inch baking dish.
  2. Soften the onion. Melt the 1/2 cup butter. Add about 1 tablespoon of the melted butter to a small skillet, then add the diced onion. Cook over medium heat for 4 to 5 minutes, until softened.
  3. Mix the creamy base. In a large mixing bowl, stir together the cream of chicken soup, sour cream, remaining melted butter, salt, pepper, garlic powder, and onion powder.
  4. Add the potatoes and cheese. Fold in the thawed diced hash browns, cooked onion, and shredded cheddar cheese until evenly combined.
  5. Assemble the casserole. Spread the potato mixture evenly into the prepared baking dish.
  6. Make the topping. In a separate bowl, stir together the lightly crushed cornflakes and 4 tablespoons melted butter.
  7. Top the casserole. Sprinkle the buttered cornflakes evenly over the potatoes.
  8. Bake. Bake uncovered for 50 to 60 minutes, or until the casserole is hot and bubbling around the edges and the topping is golden brown.
  9. Rest before serving. Let the casserole rest for 10 minutes before serving.

Notes

  • Use frozen diced hash browns for the most classic texture.
  • Thaw the potatoes completely before mixing so the casserole bakes evenly.
  • Freshly shredded sharp cheddar melts more smoothly and gives the filling a better texture.
  • Crush the cornflakes lightly instead of turning them into fine crumbs.
  • Bake uncovered so the topping gets golden and crisp. If it browns too quickly, loosely tent with foil near the end of baking.
  • Let the casserole rest for 10 minutes before serving.
