Ingredients

  • 1 pound lean ground beef
  • 1 tablespoon olive oil if needed
  • 1 medium onion diced
  • 2-3 garlic cloves minced
  • 2 tablespoons taco seasoning
  • 1 tablespoon ranch seasoning mix
  • 2 tablespoon tomato paste
  • 1 28-ounce can crushed tomatoes, undrained
  • 1 8-ounce can tomato sauce
  • 1 4-ounce can diced green chiles
  • 1 15-ounce can kidney beans, drained and rinsed
  • 1 15-ounce can black beans, drained and rinsed
  • 1 15-ounce can corn, drained
  • 3 cups low-sodium beef broth
  • 1-2 teaspoons fresh lime juice
  • Salt and pepper to taste
Optional Toppings
  • Crushed tortilla chips or Fritos
  • Sour cream
  • Shredded cheddar cheese
  • Sliced green onions
  • Fresh cilantro

Method

  1. Heat a large soup pot over medium heat. Add olive oil if needed.
  2. Add ground beef and cook, breaking it up, until browned. Drain excess grease if necessary.
  3. Add onion and cook 3–4 minutes until softened.
  4. Stir in garlic and cook 30 seconds, just until fragrant.
  5. Add taco seasoning, ranch seasoning, and tomato paste. Stir 30–60 seconds to bloom the spices and lightly carmelize the tomato paste.
  6. Stir in crushed tomatoes, tomato sauce, green chiles, and beef broth. Bring just to a boil.
  7. Reduce heat to a steady simmer. Add beans and corn.
  8. Simmer uncovered 20–25 minutes, stirring occasionally, until flavors meld and broth is lightly thickened but still brothy.
  9. Stir in fresh lime juice. Taste and adjust salt and pepper.
  10. Serve hot with desired toppings.

Notes

  • Bloom seasonings in fat for deeper flavor.
  • Use 3 cups broth for brothy consistency.
  • Soup thickens slightly as it rests.
  • Add broth when reheating if needed.
