Ingredients

  • 1½ tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 small yellow onion finely diced
  • 3 cloves garlic minced
  • 1 tbsp tomato paste
  • 1 tsp dried basil
  • ½ tsp dried oregano
  • ¼ tsp crushed red pepper flakes optional
  • ½ tsp kosher salt plus more to taste
  • ¼ tsp black pepper
  • 1 28 oz can crushed tomatoes
  • 5 cups good-quality chicken broth
  • ¾ cup heavy cream
  • 1 20 oz package refrigerated cheese tortellini
  • ½ cup freshly grated Parmesan plus more for serving
  • 2 cups fresh baby spinach
  • 1 tsp sugar optional, only if tomatoes taste sharp

Method

Build the Base
  1. Heat olive oil and butter in a Dutch oven over medium heat.
  2. Add onion and cook 4–5 minutes until softened.
  3. Stir in garlic and cook 30 seconds.
  4. Add tomato paste, basil, oregano, red pepper flakes, salt, and pepper. Cook 1 minute to deepen flavor.
Simmer
  1. Add crushed tomatoes and chicken broth. Bring to a gentle simmer and cook 10–12 minutes to allow flavors to develop.
Finish the Soup
  1. Stir in heavy cream and simmer 2 minutes.
  2. Add tortellini and cook according to package directions (usually 4–6 minutes), just until tender.
  3. Stir in Parmesan and spinach. Cook until spinach wilts.
  4. Taste and adjust seasoning. Add sugar only if needed to balance acidity.
  5. Serve hot with additional Parmesan.

Notes

  • Tortellini absorbs broth as it sits; add extra broth when reheating.
  • For a thicker texture, simmer uncovered a few extra minutes before adding tortellini.
  • Freeze without tortellini for best results; cook pasta fresh when serving.
