Ingredients

  • 1 large head cauliflower 2½–3 pounds, cut into florets (about 8 cups)
  • 3 tablespoons olive oil divided
  • Salt and black pepper to taste
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion diced
  • 3 cloves garlic minced
  • 4 cups low-sodium vegetable broth or chicken broth
  • 1 teaspoon dried thyme
  • ⅛ –¼ teaspoon freshly grated nutmeg
  • ¾ cup heavy cream
  • 1 cup whole milk
  • ½ cup freshly grated Parmesan cheese optional but recommended
  • Fresh chives or parsley for garnish (optional)

Method

Roast the Cauliflower
  1. Preheat oven to 425°F.
  2. Toss cauliflower with 2 tablespoons olive oil, ½ teaspoon salt, and ¼ teaspoon black pepper.
  3. Spread on a large baking sheet and roast 25–30 minutes, turning once, until deeply golden and tender. Set aside.
Build the Base
  1. In a large Dutch oven over medium heat, add remaining 1 tablespoon olive oil and butter.
  2. Add onion and cook 5–6 minutes until softened but not browned.
  3. Stir in garlic and cook 30 seconds.
Simmer
  1. Add roasted cauliflower, broth, thyme, and nutmeg.
  2. Bring to a gentle simmer and cook 10–15 minutes to allow flavors to meld.
Blend
  1. Using an immersion blender, purée until completely smooth and velvety.
(Or carefully blend in batches in a high-speed blender.)
Finish
  1. Reduce heat to low. Stir in milk and heavy cream.
  2. If using Parmesan, stir in now until fully melted and incorporated.
  3. Heat gently — do not boil.
  4. Taste and adjust salt and pepper.
Serve
  1. Ladle into bowls and garnish with chives or parsley if desired.

Notes

  • Roasting the cauliflower is essential for depth and natural sweetness.
  • For a lighter version, replace the heavy cream with additional milk.
  • Soup thickens slightly as it cools; loosen with broth or milk when reheating.
  • For freezing, omit cream and add dairy after reheating.
