Broccoli Cheddar Soup
creamy • one-pot • stovetop

A thick, creamy broccoli cheddar soup with real cheese flavor and tender broccoli throughout. It’s the kind of soup that feels like a reset after a long day—simple, dozy, and dependable. This version keeps the texture balanced—smooth but not puréed—and avoids grainy cheese or overly heavy cream.
Why This Recipe Works
This broccoli cheddar soup is creamy without being overly thick. A simple butter-and-flour base provides structure, while milk and half-and-half create a smooth, stable texture.
The broccoli simmers until very tender, so it blends easily without turning fibrous. This keeps the soup creamy without feeling baby-food smooth. Blending only part of the soup keeps the texture classic—thick and creamy with visible pieces of broccoli.
Cheese is added off active heat and stirred in gradually, preventing separation and graininess. Freshly grated cheese melts more smoothly and produces better flavor.
It has the same rich, velvety texture as my Creamy Mushroom Soup, with the balanced creaminess you’ll also find in my Creamy Potato Soup (no heavy cream).
Ingredients & Notes
- Broccoli: Use 1 pound florets, chopped small so they soften in 15–18 minutes.
- Cheese: Freshly grate cheddar and Gruyère. Pre-shredded cheese contains anti-caking agents and may not melt smoothly.
- Nutmeg: Use just ⅛ teaspoon—enough to warm the background without tasting like spice.
- Dijon mustard: Optional, but it quietly sharpens the cheddar flavor without anyone asking what you added.
- Milk and half-and-half: Create creaminess without making the soup overly heavy.

For another cozy, creamy option, my Creamy Tomato Soup (Panera copycat) is always a favorite.

Texture & Flavor Tips
- For thicker soup: Simmer uncovered 3–5 minutes before adding cheese, until it coats the back of a spoon.
- For smoother texture: Blend slightly more of the soup.
- If cheese turns grainy: Heat was too high. Keep below a simmer when adding cheese.
- If too thick when reheating: Add a splash of milk or broth.
- For sharper flavor: Add an extra 1–2 tablespoons cheddar at the end.
Substitutions & Variations
- Lighter version: Replace half-and-half with additional milk.
- Richer version: Use heavy cream instead of half-and-half.
- Vegetarian: Use vegetable broth.
- Add-ins: Cooked diced potatoes or cauliflower can be added before blending.
- Do not freeze: Dairy-based soups can separate after thawing.
- If you want a smooth, creamy texture without making it heavy, see my guide on How to Make Soup Creamy Without Cream.

Storage & Reheating
- Refrigerator: Store up to 4 days in an airtight container.
- Freezer: Not recommended due to dairy separation.
- Reheating (stovetop): Warm over low heat, stirring frequently. Do not boil.
- Reheating (microwave): Heat in short intervals, stirring between each.
