Creamy Mushroom Soup
creamy • one-pot • stovetop

A rich, velvety mushroom soup with deep savory flavor and a smooth finish. This version balances browned mushrooms, a light cream base, and subtle brightness so it tastes full without feeling heavy. This is the kind of soup I make on a quiet evening when I want something simple but deeply comforting.
Why This Recipe Works
This mushroom soup builds flavor the right way—by browning the mushrooms until their liquid cooks off and they begin to caramelize. That step concentrates their natural savoriness and prevents a watery result.
A small amount of flour provides body without turning the soup pasty. Blending most of the soup creates a smooth texture while leaving a little mushroom texture for contrast.
Milk and cream are added gently at the end, keeping the soup silky. A small splash of soy sauce (or Worcestershire) deepens the savory notes, and lemon juice brightens the finish.
The result is creamy, balanced, and restaurant-quality without being overly rich.
It has the same rich, velvety texture as my Broccoli Cheddar Soup, with the balanced creaminess you’ll also find in my Creamy Potato Soup (no heavy cream).
Ingredients & Notes
- Mushrooms: Use 24 oz total. Cremini offer deeper flavor, but white mushrooms or a mix work well.
- Browning: Allow the released liquid to fully evaporate before mushrooms begin to brown. This is key to depth.
- Flour: Just enough to lightly thicken the broth without heaviness.
- Cream: ½ cup keeps it creamy but not overly heavy.
- Soy sauce or Worcestershire: Adds subtle umami. Start small—you can always add more.
- Lemon juice: Added off heat for brightness without sourness.

For another cozy, cream-based option, my Creamy Tomato Soup (Panera copycat) is a reader favorite.
Equipment
- Large Dutch oven or heavy-bottomed pot
- Whisk
- Wooden spoon or silicone spatula
- Immersion blender (preferred)
- Ladle
How to Make Creamy Mushroom Soup
- Heat butter and olive oil in a large pot over medium heat. Add onion and cook 4–5 minutes until softened.
- Stir in garlic and cook 30 seconds.
- Add mushrooms with a pinch of salt. Cook 8–12 minutes, stirring occasionally, until their liquid evaporates and the mushrooms turn deep golden brown and smell earthy and rich.
- Stir in thyme and flour. Cook 1 minute.
- Add wine (if using) and simmer 1–2 minutes until mostly reduced.
- Gradually whisk in broth until smooth. Bring to a gentle simmer and cook uncovered 12–15 minutes, until slightly thickened.
- Remove about 1 cup mushrooms for texture if desired. Blend the soup until mostly smooth, leaving some texture. Return reserved mushrooms to the pot.
- Reduce heat to low. Stir in milk, cream, soy sauce (or Worcestershire), and lemon juice. Heat gently; do not boil.
- Taste and adjust salt and pepper. Serve hot.

Texture & Flavor Tips
- For deeper flavor: Let mushrooms brown well before adding flour.
- For thicker soup: Simmer a few extra minutes before blending.
- For smoother texture: Blend more thoroughly.
- If too thick when reheating: Add a splash of milk or broth.
- For extra richness: Add 1 tablespoon butter at the end.
Substitutions & Variations
- Vegetarian: Use vegetable broth and soy sauce instead of Worcestershire.
- Dairy-light: Replace cream with additional milk.
- Wine-free: Omit wine; add 1 tablespoon extra broth instead.
- Herb swap: Fresh thyme can be replaced with rosemary for a slightly earthier profile.
- If you want to thicken the soup without making it heavy, see my guide on How to Make Soup Creamy Without Cream.

Storage & Reheating
- Refrigerator: Store up to 4 days in an airtight container. It will thicken as it cools. Stir in a splash of milk or broth when reheating to loosen it.
- Freezer: Can be frozen, though texture may soften slightly due to dairy.
- Reheating (stovetop): Warm gently over low heat. Do not boil.
- Reheating (microwave): Heat in short intervals, stirring between each.
FAQs
Why is my mushroom soup bland?
The mushrooms likely weren’t browned long enough. Allow moisture to evaporate fully before adding broth.
Can I freeze creamy mushroom soup?
Yes, but the texture may soften slightly. Reheat gently and stir well.
Can I skip the cream?
Yes. The soup will be lighter but still smooth after blending.
